Ingredients
2 cups Long Grain White Rice
4 cups Chicken Broth
2 pieces Boneless
Skinless Chicken Breasts
2 tablespoons Olive Oil
1 teaspoon Salt
1 teaspoon Black Pepper
1 cup Greek Yogurt
2 cloves Minced Garlic
1 cup Grated Cucumber
2 tablespoons Dill
2 tablespoons Lemon Juice
1 teaspoon Oregano
1 teaspoon Paprika
1 cup Cucumber
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the rice and chicken broth; stir to mix.
- Place the chicken breasts on top of the rice mixture and drizzle with olive oil, salt, and pepper.
- Cover the dish with aluminum foil and bake for 25 minutes.
- While the chicken is baking, prepare the tzatziki sauce by combining Greek yogurt, minced garlic, grated cucumber (with excess moisture squeezed out), dill, lemon juice, oregano, and paprika in a bowl.
- Remove the foil from the baking dish and bake for an additional 5-10 minutes until the chicken is cooked through.
- Serve the chicken and rice topped with tzatziki sauce and diced cucumbers.
Notes
For a lighter option, substitute Greek yogurt with dairy-free yogurt. You can also use skinless thighs instead of breasts for a richer flavor.
