boneless poultry thighs

1 cup juice of the pineapple

1/2 cup soy sauce

1/4 cup honey

2 Tablespoons Brown Sugar

2 tablespoons of rice vinegar

1 teaspoon sesame oil

3 cloves garlic minced

1 teaspoon of grated ginger

Half teaspoon red pepper flakes

1 cup cornstarch

2 tablespoons of water

4 slices of pineapple

2 onions chopped

Sesame seeds


Instructions

  • In a large bowl, combine the pineapple juice, soy sauce, honey, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes to create a marinade.
  • Add the chicken thighs to the marinade, cover, and refrigerate for at least 30 minutes (or up to 4 hours) to soak in the flavors.
  • Preheat your grill to medium-high heat. Remove the chicken from the marinade, reserving the marinade for later.
  • Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
  • Meanwhile, prepare the sauce by adding the reserved marinade to a saucepan. Mix the cornstarch with water until smooth and add this mixture to the sauce. Cook over medium heat until thickened.
  • Grill the pineapple slices for about 2-3 minutes on each side until they have grill marks and are caramelized.
  • Serve the grilled chicken topped with the thickened sauce, grilled pineapple slices, and garnish with chopped onions and sesame seeds.

Notes

For a healthier option, use low sodium soy sauce. Adjust the red pepper flakes according to your spice preference. Serve with rice or salad for a complete meal.
