2 medium sweet potatoes
2 tbsp unsalted almond butter
1/4 to 1/2 cup unsweetened vanilla almond milk
1 tsp vanilla extract (I use Simply Organic vanilla extract)
2 tbsp maple syrup (grade A amber rich for best flavor)
1/2 tsp ground cinnamon
2 tbsp ground flaxseed
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pierce the sweet potatoes several times with a fork, then place them on the prepared baking sheet.
- Bake in the preheated oven for 30-40 minutes, or until fork-tender.
- Once baked, let the sweet potatoes cool slightly, then scoop out the flesh into a mixing bowl.
- Add almond butter, almond milk, vanilla extract, maple syrup, ground cinnamon, and ground flaxseed to the sweet potato flesh and mash until combined and smooth.
- Serve in bowls, drizzling with extra almond milk if desired, and enjoy your delicious breakfast!

Feel free to adjust the sweetness by adding more or less maple syrup according to your taste preferences.
