This Delicious Street Corn Chicken Rice Bowl combines tender chicken, sweet corn, and vibrant bell peppers, all tossed in a zesty lime dressing for a quick and satisfying meal ready in just 35 minutes.
Ingredients
3 boneless
skinless chicken breasts (about 1.5 lbs)
2 tbsp olive oil
4 cloves fresh garlic (minced)
1 cup sweet corn (fresh or frozen)
1 cup diced bell peppers (any color)
Juice of 2 limes
1 cup sour cream
2 tsp chili powder
4 cups cooked rice
Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and chili powder.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken and let it rest.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add sweet corn and diced bell peppers to the skillet. Sauté for another 5 minutes until the vegetables are tender.
- In a bowl, mix lime juice with sour cream and season with salt and pepper to taste.
- Slice the rested chicken and arrange it over cooked rice in bowls. Top with the sautéed corn and peppers, and drizzle with lime-sour cream mixture.
