This Delicious Slow Cooker Garlic Butter Chicken & Veggies is a comforting and flavorful dish perfect for a family meal. Tender chicken thighs are slow-cooked with vibrant vegetables in a rich garlic butter sauce.
Ingredients
2 pounds boneless
skinless chicken thighs
1 ½ pounds small red potatoes
1 pound carrots
1 large yellow onion
1 head of garlic
½ cup unsalted butter
1 cup chicken broth
2 tablespoons fresh parsley
1 tablespoon dried Italian seasoning
1 teaspoon dried thyme
½ teaspoon smoked paprika
salt and freshly ground black pepper to taste
optional: 2 tablespoons cornstarch + 2 tablespoons cold water
Instructions
- Prepare the ingredients: peel and chop the onion, mince the garlic, scrub the potatoes, and chop the carrots into 1-inch pieces.
- Place the chicken thighs at the bottom of the slow cooker.
- Add the potatoes, carrots, and onion on top of the chicken.
- In a small saucepan, melt the butter over medium heat and then add the minced garlic, Italian seasoning, thyme, smoked paprika, salt, and pepper. Stir to combine.
- Pour the garlic butter mixture over the chicken and veggies in the slow cooker, followed by the chicken broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and vegetables are cooked through.
- If you prefer a thicker sauce, mix cornstarch and cold water in a small bowl to create a slurry, then stir it into the slow cooker during the last 30 minutes of cooking.
- Serve hot, garnished with fresh parsley.
Notes
For best results, use fresh garlic instead of pre-minced garlic. Adjust seasoning to taste at the end of cooking.
