This Delicious Salsa Verde Chicken Casserole combines tender shredded chicken, flavorful salsa verde, and creamy Monterey Jack cheese for a comforting and satisfying dish perfect for any occasion.
Ingredients
3 cups grated Monterey Jack cheese
32 fl oz green salsa
1 tbsp olive oil
1 tsp ground cumin
12 small corn tortillas
3/4 cup sour cream
2 minced garlic cloves
1/2 chopped onion
1 small pinch kosher salt
1 tbsp chili seasoning
3 cups shredded cooked chicken
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the shredded chicken, green salsa, ground cumin, chili seasoning, and kosher salt. Cook until everything is heated through.
- In a baking dish, layer 4 corn tortillas, half of the chicken mixture, and 1 cup of Monterey Jack cheese. Repeat the layers, finishing with 4 tortillas on top.
- Spread the sour cream over the top layer of tortillas and sprinkle with the remaining cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with sliced jalapeños, crumbled cotija cheese, diced red onion, and chopped cilantro.
Notes
For a spicier version, add more jalapeños or use a hotter salsa. This casserole can be prepared ahead of time and baked just before serving.
