This Daniel Fast Black Bean Soup Recipe is an easy and hearty meal featuring creamy avocado and zesty lime, perfect for a nourishing and fulfilling dish.
Ingredients
2 tablespoons olive oil
1 medium yellow onion diced
3 cloves garlic minced
2 medium carrots peeled and diced
2 celery stalks diced
2 cans black beans drained and rinsed
4 cups low-sodium vegetable broth
1 can diced tomatoes no salt added
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 bay leaf
1/4 teaspoon red pepper flakes
1–2 ripe avocados sliced or diced
2 limes cut into wedges
Fresh cilantro leaves
Diced fresh tomatoes or jalapeño
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
- Add minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the black beans, vegetable broth, diced tomatoes, ground cumin, smoked paprika, sea salt, black pepper, bay leaf, and red pepper flakes (if using). Bring to a boil.
- Once boiling, reduce the heat and let simmer for 20 minutes, allowing the flavors to meld together.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with slices of avocado, lime wedges, cilantro, and optional diced tomatoes or jalapeño.
Notes
For extra creaminess, you can blend a portion of the soup and then mix it back in. Ensure all canned ingredients are Daniel Fast compliant.
