Dandelion Jelly is a unique and delightful spread made from the bright yellow petals of dandelions, offering a sweet and floral flavor that pairs well with toast or biscuits.
Ingredients

4 cups dandelion petals
or 2 cups packed petals
4 cups sugar
2 Tbsp. lemon juice
or 1/2 tsp citric acid
1 box Powdered Pectin
1.75 ounces
such as Sure Jel

Instructions
- Collect 4 cups of dandelion petals, making sure they are free from dirt and bugs.
- In a large pot, combine the dandelion petals with boiling water and let it steep for a few hours or overnight.
- Strain the mixture to remove the petals, keeping the liquid.
- Add 4 cups of sugar, 2 tablespoons of lemon juice (or 1/2 teaspoon citric acid), and the powdered pectin to the strained liquid in the pot.
- Bring the mixture to a full boil, stirring constantly until the sugar and pectin are fully dissolved.
- Once at a full boil, let it cook for about 10 minutes.
- Pour the jelly into sterilized jars and seal them properly.
Notes
Make sure to use only the petals and not the green parts of the dandelion to avoid bitterness. This jelly can be stored in the refrigerator for up to a year if sealed properly.
