Description
Cucumber Tea Sandwiches are a refreshing and light treat, perfect for afternoon tea or as an appetizer. These delicate sandwiches combine creamy, herb-infused cream cheese with crisp cucumber slices, served atop soft white bread.
Ingredients
8 slices white sandwich bread
4 oz cream cheese
softened
1 tbsp fresh dill
finely chopped
1 English cucumber
thinly sliced
1/8 tsp salt
Pinch black pepper (optional)
Instructions
- In a mixing bowl, combine the softened cream cheese, fresh dill, salt, and black pepper (if using). Mix until smooth.
- Lay out 4 slices of the bread and spread a generous layer of the cream cheese mixture on each slice.
- Top each slice with a layer of thinly sliced cucumber.
- Place the remaining slices of bread on top and gently press down. Cut each sandwich into quarters or halves, as desired.
Notes
For added flavor, you can mix other herbs into the cream cheese. These sandwiches are best served fresh, but can be made a few hours in advance and stored in the refrigerator.
