skinless chicken breasts
2 tablespoons olive oil
½ cup low-sodium chicken broth
1 teaspoon kosher salt
½ teaspoon onion powder
½ teaspoon ground paprika
½ teaspoon Italian seasoning
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
Instructions
- In a large bowl, mix together olive oil, chicken broth, and all the seasonings.
- Add the chicken breasts to the slow cooker and pour the seasoning mix over them, ensuring they are well coated.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
- Remove the chicken from the slow cooker and shred it with two forks before returning it to the cooker to soak up the juices.
