Crockpot Crack Chicken Pasta is a creamy, cheesy dish that combines tender chicken, pasta, and ranch flavors for a comforting meal that’s easy to prepare in your slow cooker.
Ingredients
3 boneless
skinless chicken breasts
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
2 cups reduced sodium chicken broth or stock
16 oz dried short-cut pasta (such as fusilli
penne
etc)
16 oz cream cheese
1 packet ranch dressing mix
2 cups shredded cheddar cheese
divided
1 cup water
8 slices bacon
cooked and crumbled (or bacon bits if preferred)
2–3 green onions
chopped for garnish
Instructions
- In a crockpot, season the chicken breasts with kosher salt, black pepper, garlic powder, and onion powder.
- Pour in the chicken broth and water, then cover and cook on low for 4-6 hours or until the chicken is cooked through.
- Once cooked, remove the chicken and shred it with two forks.
- Add the cream cheese, ranch dressing mix, and shredded cheddar cheese to the crockpot, stirring until melted and combined.
- Stir in the shredded chicken and dried pasta. Cover and cook on high for 30 minutes, stirring halfway through.
- Once the pasta is al dente, stir in the crumbled bacon and serve hot, garnished with chopped green onions.
Notes
Feel free to adjust the type of pasta used based on your preference. The recipe can be easily doubled for larger gatherings.
