Ingredients
2 pounds beef chuck roast cubed
4 carrots sliced
3 medium potatoes cubed
1 medium onion chopped
3 cloves garlic minced
4 cups low-sodium beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
2 bay leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon cornstarch optional
Instructions
- In a large bowl, season the cubed beef chuck roast with salt and pepper. Place it in the slow cooker.
- Add the sliced carrots, cubed potatoes, chopped onion, and minced garlic to the slow cooker.
- In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Pour the mixture over the beef and vegetables.
- Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- If you want to thicken the stew, mix cornstarch with a little cold water and stir it into the stew. Cook for an additional 30 minutes.
