Ingredients

Salmon fillets (1 ½ pounds)

Corn starch or arrowroot powder (1 tablespoon)

Sesame oil (2 tablespoons)

Soy sauce (3 tablespoons)

Honey (1 tablespoon)

Ginger powder (½ teaspoon)

Sesame seeds (1 tablespoon)

Cooked white rice (2 cups)

Rice wine vinegar (1 tablespoon)

Sea salt (â…“ teaspoon)

Avocado (1 large

cubed)

Persian cucumbers (2 to 3

sliced)

Carrot (1

shredded)

Green onions (3

diced)

Optional toppings: Spicy mayo

chopped nori paper

extra sesame seeds


Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together soy sauce, honey, sesame oil, ginger powder, and sea salt. Add the salmon fillets, allowing them to marinate for about 10 minutes.
  • After marinating, remove the salmon and coat each fillet lightly with corn starch or arrowroot powder, ensuring an even layer.
  • Place the salmon on the prepared baking sheet and bake for 15-20 minutes, or until the salmon is crispy and cooked through.
  • While the salmon bakes, prepare your rice by mixing cooked white rice with rice wine vinegar. Set aside.
  • Once the salmon is done, remove it from the oven and sprinkle with sesame seeds.
  • Assemble the bowls by layering the rice, then top with shredded carrot, sliced cucumbers, avocado, and diced green onions.
  • Finally, place the crispy salmon on top and drizzle with spicy mayo and optional toppings, if using. Serve immediately and enjoy!
