Description

Ingredients

750 g / 1.5 lb baby potatoes

halved (about 3.5cm / 1.75″

2024 potatoes)

2 tbsp olive oil

plus more for drizzling

1/2 cup / 50 g grated parmesan

1/2 tsp garlic powder

1/2 tsp dried oregano or thyme

1/2 tsp paprika

1/4 tsp salt

1/2 tsp black pepper

3/4 cup sour cream

or sub with plain yoghurt

or a combination of both

1/4 cup finely chopped green onions/scallions

plus more for garnish


Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the halved baby potatoes with olive oil until well coated.
  • In a separate bowl, combine the grated parmesan, garlic powder, dried herbs, paprika, salt, and black pepper.
  • Sprinkle the parmesan mixture over the potatoes and toss until evenly coated.
  • Spread the potatoes out in a single layer on a baking sheet and roast for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  • While the potatoes roast, prepare the dipping sauce by combining sour cream with chopped green onions in a bowl.
  • Once the potatoes are done, remove from the oven and serve hot with the dipping sauce on the side.

Notes

Make sure to use the sand-like type of grated parmesan for optimal sticking. You can also adjust the seasoning to your taste or add additional herbs.
