1 bunch fresh parsley

2 1/4 teaspoons turmeric

1/2 teaspoon salt

1/4 teaspoon pepper

more or less to taste

1 cup tahini paste

or more as needed


Instructions

  • Peel and grate the potatoes, then place them in a clean kitchen towel and squeeze out the excess moisture.
  • In a large mixing bowl, combine the grated potatoes, parsley, cilantro, garlic, cumin, turmeric, salt, and pepper.
  • Mix in the tahini until all ingredients are well combined and the mixture holds together.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Form the potato mixture into small patties and place them on the prepared baking sheet.
  • Bake for about 30 minutes or until golden brown and crispy, flipping halfway through.
