Ingredients
2 ½ cups all-purpose flour
¾ cup hot water (plus more as needed)
4 tablespoons vegetable oil (divided)
1 teaspoon salt
1 ½ cups finely chopped scallions (green parts only)
Sesame oil for brushing
Extra flour for rolling out the dough
Instructions
- In a mixing bowl, combine the flour and salt. Gradually add hot water while stirring until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let rest for 20 minutes.
- Divide the dough into four equal portions. Roll out each portion into a thin circle, brushing with vegetable oil and sprinkling scallions evenly over the surface.
- Roll the dough tightly into a log, then coil it into a spiral. Flatten the spiral into a pancake shape and repeat with remaining dough.
- In a skillet, heat remaining vegetable oil over medium heat. Cook each pancake for about 3-4 minutes on each side until golden brown and crispy.
- Brush with sesame oil before serving. Cut into wedges and enjoy!
Notes
Make sure to use hot water for the dough to achieve the desired flakiness. You can also add other ingredients like sesame seeds or different herbs for variation.
