Description
Indulge in the sweet and savory combination of Crispy Blueberry Grilled Cheese, featuring a homemade blueberry spread paired with gooey mozzarella and white cheddar cheese, all grilled to a perfect crisp.
Ingredients
Juice of 1 lemon
1/4 cup sugar
1 pint fresh blueberries
1 bundle lemon thyme (tied with kitchen twine)
Flaky sea salt (for finishing)
8 slices sourdough bread (1/4-inch thick)
4 oz mozzarella cheese
shredded
4 oz white cheddar
grated
4 tbsp butter (I like Kerrygold unsalted butter for this)
Instructions
- In a saucepan, combine the lemon juice, sugar, and blueberries. Cook over medium heat until the blueberries burst and the mixture thickens, about 10 minutes. Add the lemon thyme and let steep for about 5 minutes, then remove the thyme.
- Spread the blueberry mixture on 4 slices of sourdough bread. Top with shredded mozzarella and grated white cheddar, then place the remaining slices of bread on top.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add 2 sandwiches and cook until golden brown on both sides and the cheese is melted, about 3-4 minutes per side. Repeat with the remaining sandwiches.
- Sprinkle with flaky sea salt before serving. Cut in half and enjoy!
Notes
Feel free to adjust the sweetness of the blueberry spread by adding more or less sugar based on your preference. Serve immediately for the best texture.
