Crispy Baja Fish Tacos are a flavor-packed dish featuring perfectly fried cod wrapped in warm tortillas, topped with a crunchy slaw and zesty crema, perfect for any taco night.
Ingredients
Cod fillets – 1 to 1.5 lbs
cut into 2 to 3 oz portions
Salt and pepper – To season the fish
Vegetable oil – For frying
All-purpose flour – 2 cups
Cornstarch – 1/4 cup
Baking powder – 1 tsp
Chili powder – 1 tsp
Salt & pepper – 1/2 tsp each
Paprika – 1/2 tsp
Garlic powder – 1/2 tsp
Light beer – 12 oz bottle
Egg – 1
Red and/or green cabbage – 3 to 4 cups
shredded
Carrots – 2 to 3 medium
shredded
Mayonnaise – 1/4 cup
Apple cider vinegar – 1 tbsp
Hot sauce – 1 to 2 tsp
Honey – 1 tsp
Salt – 1/2 tsp
Lime juice – 1/2 lime
Sour cream – 1/2 cup
Mayonnaise – 1/2 cup
Lime juice – 1 whole lime
Jalapeño pepper – 1
minced
Fresh cilantro – 1 tbsp
chopped (optional)
Minced capers – 1 tsp
Ground cayenne pepper – 1 tsp
Dried oregano – 1/2 tsp
Ground cumin – 1/2 tsp
Dried dill weed – 1/2 tsp
Instructions
- In a bowl, mix flour, cornstarch, baking powder, chili powder, salt, paprika, garlic powder, and gradually whisk in the light beer and egg to form a smooth batter.
- Season the cod fillets with salt and pepper, then dip each piece into the batter, coating thoroughly.
- Heat vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the battered fish and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the fish and drain on paper towels. Prepare the slaw by mixing shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, hot sauce, honey, salt, and lime juice in another bowl.
- For the crema, whisk together sour cream, mayonnaise, lime juice, minced jalapeño, cilantro (if using), capers, ground cayenne, oregano, cumin, and dill weed.
- To assemble the tacos, place the crispy fish onto warm tortillas, top with crunchy slaw, and drizzle with zesty crema. Serve immediately.
