A delicious and creamy dish featuring pan-seared salmon in a rich sauce of sun-dried tomatoes and fresh spinach.
Ingredients

1 pound fresh salmon cut into 4 pieces
Salt & pepper to taste
1/4 teaspoon garlic powder
Flour for dredging
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chicken broth or dry white wine
1 teaspoon lemon juice
1/4 cup sun-dried tomatoes
1 cup heavy/whipping cream
1–2 cups (packed) fresh baby spinach
Instructions
- Season the salmon pieces with salt, pepper, and garlic powder. Dredge them lightly in flour.
- In a large skillet, heat olive oil and butter over medium heat. Add the salmon and cook for 4-5 minutes on each side until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, add chicken broth or white wine, scraping the bottom of the pan to release any brown bits. Stir in lemon juice and sun-dried tomatoes.
- Reduce the heat to low, then add the heavy cream and stir until well combined. Allow to simmer for about 5 minutes.
- Add the fresh spinach to the sauce and stir until wilted. Return the salmon to the skillet, spoon sauce over it, and cook for an additional 2-3 minutes to warm through.
Notes
For best flavor, use quality sun-dried tomatoes and fresh spinach. Adjust the thickness of the sauce by varying the amount of chicken broth or wine.
