2 pounds chicken breasts boneless and skinless

½ teaspoon salt

½ teaspoon pepper freshly ground

2 tablespoons olive oil

2 tablespoons butter unsalted

3 cloves garlic minced

1 cup sun-dried tomatoes drained and roughly chopped

1 tablespoon Italian seasoning

1 cup heavy cream

2 cups milk

1 cup Parmesan cheese freshly grated

8 ounces penne or macaroni uncooked

3 cups baby spinach


Instructions

  • Season the chicken breasts with salt and pepper.
  • In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook until golden and cooked through, about 6-8 minutes per side. Remove and set aside.
  • In the same skillet, add garlic and sauté until fragrant, about 1 minute.
  • Stir in sun-dried tomatoes and Italian seasoning.
  • Pour in heavy cream and milk, bringing to a simmer. Stir in Parmesan cheese until melted.
  • Add uncooked pasta and chicken back to the skillet, mixing well.
  • Cook until the pasta is al dente, about 10-12 minutes. Stir in baby spinach until wilted.
  • Serve warm and enjoy!

Notes

You can substitute chicken breasts for thighs if you prefer dark meat. Adjust the amount of cheese based on your taste.
