This Creamy Street Corn Pasta Salad is a delightful blend of fresh ingredients and rich flavors, perfect for summer picnics or casual gatherings.
Ingredients
1/3 cup sour cream
4 oz cream cheese
3/4 cup crumbled cotija cheese
2 tbsp olive oil
1–2 grated garlic cloves
1 tbsp chopped fresh chives
Salt and pepper to taste
1/2 cup diced spicy cheddar cheese
2 cups grilled or roasted corn
1/2 cup torn fresh basil
1/2 cup chopped fresh cilantro
1 diced avocado
1 head shredded romaine lettuce
1 lb short pasta
4 tbsp butter
1/2–2 tsp cayenne pepper
2 tsp smoked paprika
2 tbsp chili powder
1/4 cup mayonnaise
2 tbsp lime juice
Instructions
- In a bowl, combine sour cream, cream cheese, cotija cheese, olive oil, grated garlic, chives, salt, and pepper to create the dressing; mix well.
- In a large pot, cook the short pasta according to package instructions until al dente. Drain and set aside to cool.
- In a skillet, melt butter and stir in cayenne, smoked paprika, and chili powder; cook for 2-3 minutes until fragrant.
- In a large mixing bowl, combine the cooked pasta, grilled corn, diced cheddar cheese, basil, cilantro, avocado, and shredded romaine lettuce.
- Add the dressing to the pasta mixture and toss gently to coat evenly.
- Drizzle chili butter over the salad and mix lightly before serving.
- In a small bowl, whisk together mayonnaise and lime juice for a zesty topping, if desired.
Notes
For a milder taste, substitute cotija cheese with feta. Use fresh garlic for the best flavor.
