4 cups vegetable broth or chicken broth

1 medium potato peeled and diced

1 cup heavy cream or coconut cream

Salt and black pepper to taste

Juice of 1/2 lemon

Fresh herbs for garnish (chives

Optional: 1 tsp mustard seeds or toasted sesame seeds for garnish

Instructions

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  • Add the asparagus and sauté for about 5 minutes until it starts to soften.
  • Stir in the fresh spinach leaves and snap peas, cooking until the spinach wilts.
  • Add the diced potato and vegetable broth, bringing the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes, until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. Stir in the heavy cream or coconut cream until fully combined.
  • Season with salt, black pepper, and lemon juice to taste. Simmer for another 5 minutes.
  • Ladle the soup into bowls and garnish with fresh herbs and optional seeds or oil if desired.

Notes
