Ingredients

3 lbs. Potatoes peeled and cut into pieces (russet
yukon gold
or red)
1/2 cup Butter
1 1/2 cups Half-n-Half or cream or whole milk
1/2 cup Sour Cream
2 teaspoons Salt
1/2 cup Quality Parmesan Cheese plus 1/2 cup for garnish
1/2 teaspoon Pepper
Instructions
- Place the peeled and cut potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat.
- Reduce the heat to medium and cook the potatoes for about 15-20 minutes or until they are fork-tender.
- Drain the potatoes and return them to the pot. Over low heat, add butter, half-n-half (or cream), sour cream, salt, and pepper.
- Mash the potatoes until smooth and creamy, then stir in 1/2 cup of Parmesan cheese until well combined.
- Transfer the mashed potatoes to a serving dish, sprinkle with additional Parmesan cheese, and serve warm.
Notes
Feel free to adjust the amount of butter and cream to your desired richness. This recipe can easily be doubled for larger gatherings.
