5 navel oranges
4 to 6 bone-in
skin-on chicken thighs (about 2 pounds total)
Salt and pepper
1 large shallot
sliced
2½ cups fresh or frozen cranberries
1 (3-inch) cinnamon stick
5 tablespoons honey
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken thighs with salt and pepper.
- In a large oven-safe skillet, heat some oil over medium-high heat and brown the chicken thighs, skin-side down, for about 5-6 minutes until golden brown.
- Flip the chicken and add the sliced shallot, cranberries, cinnamon stick, and juice from 2 oranges to the skillet.
- Drizzle honey over the mixture and sprinkle in the zest from the remaining 3 oranges.
- Cover the skillet and transfer it to the preheated oven. Bake for 20-25 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve the chicken thighs with the cranberries and sauce spooned over the top, garnished with orange slices if desired.
