This Cranberry Apple Salad is a refreshing mix of tart cranberries and crisp apples, perfect for any gathering.
Ingredients

1 1/2 cup fresh cranberries
thawed if frozen
3 tablespoons granulated sugar
1/2 cup extra-virgin olive oil
2 tablespoons fresh lime juice
2 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. black pepper
2 Granny Smith apples
cored and chopped
1 cup walnuts
chopped
1/4 cup sliced scallions
2–3 hearts of romaine lettuce
chopped
Instructions
- In a medium bowl, combine the cranberries and sugar. Let them sit for about 10 minutes to macerate.
- In a small bowl, whisk together the olive oil, lime juice, Dijon mustard, salt, and pepper to create the dressing.
- Add the chopped apples, walnuts, and scallions to the cranberries and toss to combine.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve the salad on a bed of chopped romaine lettuce.
Notes
For an added crunch, toast the walnuts before adding them to the salad.
