1.5 lb Yukon Gold potatoes

1 green bell pepper

4 large eggs
1 tbsp unsalted butter
1 tbsp olive oil
0.5 tsp smoked paprika
Black pepper and kosher salt to taste
Instructions
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the diced Yukon Gold potatoes and cook until tender and golden brown, about 15-20 minutes, stirring occasionally.
- Stir in the chopped onion, green bell pepper, and minced garlic, cooking until the vegetables are soft, about 5 minutes.
- Add the shredded corned beef, smoked paprika, salt, and black pepper to the skillet and mix well, heating through for about 5 minutes.
- Using a spoon, create four wells in the hash and crack an egg into each well.
- Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
- Garnish with chopped fresh parsley before serving.
