Ingredients
Boneless skinless chicken breasts: 1 lb
diced
Cajun seasoning: 1 tablespoon
Olive oil: 1 tablespoon
Diced onions: 1 cup
Garlic: 2 cloves

Bell pepper: 1 cup

Orzo pasta: 1 ½ cups
Chicken broth: 4 cups
Heavy cream: 1 cup
Parmesan cheese: 1 cup

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken and Cajun seasoning, cooking until the chicken is browned and cooked through.
- Add the diced onions, garlic, and bell pepper (if using) to the pot. Sauté until the vegetables are softened, about 3-4 minutes.
- Stir in the orzo and chicken broth. Bring to a boil, then reduce heat to a simmer and cover. Cook for about 10 minutes, or until the orzo is tender.
- Once the orzo is cooked, stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste. Heat through until the cheese is melted and the sauce is creamy.
