Ingredients

4 red onions (cut into 1-inch wedges)

olive oil (for brushing

I like Filippo Berio extra virgin olive oil)

2 green bell peppers (cut into 1-inch squares)

4 zucchini (cut into 1-inch thick rounds)

2 yellow bell peppers (cut into 1-inch squares)

2 red bell peppers (cut into 1-inch squares)

2 orange bell peppers (cut into 1-inch squares)

salt

black pepper

1/3 cup olive oil

3 tbsp fresh cilantro (minced)

5 garlic cloves (freshly minced for best flavor)

3 tbsp fresh parsley (minced

for bright flavor)

1 tsp fresh rosemary (minced)


Instructions

  • Preheat your grill to medium-high heat.
  • In a large mixing bowl, combine balsamic vinegar, salt, and pepper. Add the prepared vegetables and toss to coat evenly.
  • Skewer the vegetables onto the skewers, alternating colors for a beautiful presentation.
  • Brush each skewer with olive oil to prevent sticking.
  • Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  • While the skewers are grilling, prepare the garlic herb sauce by mixing olive oil, minced cilantro, garlic, parsley, and rosemary in a small bowl.
  • Once the skewers are done, remove them from the grill and drizzle with the garlic herb sauce before serving.

Notes

Feel free to substitute any of the vegetables based on your preferences or seasonal availability. These skewers can also be made on a grill pan if you don’t have access to an outdoor grill.
