Instructions

  • In a large pot, heat a drizzle of oil over medium heat, then add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  • Add the curry powder, sliced carrots, and chopped bell peppers to the pot. Cook for about 5 minutes, stirring frequently.
  • Pour in the vegetable broth and coconut milk, bringing the mixture to a simmer. Let it cook for 15 minutes.
  • Stir in the fresh spinach and simmer for another 5 minutes until the spinach is wilted.
  • In a bowl, combine the flour, baking powder, and a pinch of salt. Gradually add the water until a soft dough forms.
  • Drop spoonfuls of the dumpling dough into the simmering soup. Cover and cook for 10 minutes until the dumplings are fluffy.
  • Season with salt and pepper to taste before serving hot.
