2 cups vegetable broth
1 tablespoon curry powder
1 onion chopped
2 cloves garlic minced

1 cup carrots sliced
1 cup bell peppers chopped
1 cup spinach
1 cup flour for dumplings
1 teaspoon baking powder
1/2 cup water
Salt to taste

Instructions
- In a large pot, heat a drizzle of oil over medium heat, then add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
- Add the curry powder, sliced carrots, and chopped bell peppers to the pot. Cook for about 5 minutes, stirring frequently.
- Pour in the vegetable broth and coconut milk, bringing the mixture to a simmer. Let it cook for 15 minutes.
- Stir in the fresh spinach and simmer for another 5 minutes until the spinach is wilted.
- In a bowl, combine the flour, baking powder, and a pinch of salt. Gradually add the water until a soft dough forms.
- Drop spoonfuls of the dumpling dough into the simmering soup. Cover and cook for 10 minutes until the dumplings are fluffy.
- Season with salt and pepper to taste before serving hot.
