Ingredients
128-ounce can whole San Marzano tomatoes
certified D.O.P. if possible
¼ cup extra-virgin olive oil
7 garlic cloves
peeled and slivered
Small dried whole chile or pinch crushed red pepper flakes
1 teaspoon kosher salt
1 large fresh basil sprig or ¼ teaspoon dried oregano
more to taste
Instructions
- In a large skillet or saucepan, heat the extra-virgin olive oil over medium heat.
- Add the slivered garlic and cook until fragrant and golden, about 1-2 minutes, being careful not to let it burn.
- Add the dried whole chile or crushed red pepper flakes and stir for an additional minute.
- Pour in the whole San Marzano tomatoes, breaking them up with a spoon. Add the kosher salt and stir to combine.
- Bring the sauce to a simmer, then reduce heat and let it cook for 20-30 minutes, stirring occasionally.
- During the last few minutes of cooking, add the fresh basil or dried oregano for added flavor.
- Taste and adjust seasoning if needed before serving over your favorite pasta.
