3/4 cup (180 ml) extra-virgin olive oil

2 tbsp finely grated Parmesan cheese

Salt

Freshly ground black pepper

Optional: 1 tsp capers

Instructions

  • In a medium bowl, whisk together the egg yolk (or mayonnaise), anchovies, garlic, Dijon mustard, lemon juice, and Worcestershire sauce until smooth.
  • Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  • Stir in the grated Parmesan cheese, and season with salt and freshly ground black pepper to taste.
  • If using, add the chopped capers and mix well.
