¼ cup butter

¾ cup confectioners’ sugar

½ teaspoon vanilla extract

Instructions

  • In a small bowl, combine milk and vinegar and let sit for 5 minutes to sour the milk.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the egg, melted butter, vanilla extract, and the soured milk.
  • Add the wet ingredients to the dry ingredients, mixing until just combined.
  • In a separate bowl, combine brown sugar, melted butter, and ground cinnamon for the cinnamon swirl filling.
  • Heat a non-stick skillet over medium heat and lightly grease with cooking spray.
  • Pour ¼ cup of batter onto the skillet, then drizzle the cinnamon swirl filling on top in a spiral pattern.
  • Cook until bubbles form on the surface, then flip the pancake and cook for another 2-3 minutes until golden brown.
  • Repeat with remaining batter and filling.
  • For the cream cheese icing, beat together softened butter, cream cheese, confectioners’ sugar, and vanilla extract until smooth.
