Ingredients
4 boneless
skinless chicken breasts
2 tablespoons olive oil
1 medium onion
finely chopped
3 cloves garlic
minced
2 yellow amarillo peppers
chopped
1 cup chicken broth
1 cup heavy cream
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper
to taste
Fresh cilantro
for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Stir in the chopped amarillo peppers and cook for an additional 5 minutes.
- Add the chicken breasts to the skillet, seasoning with cumin, paprika, salt, and pepper. Brown the chicken on both sides.
- Pour in the chicken broth and bring to a simmer. Cover the skillet and let it cook for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken breasts and stir in the heavy cream, allowing the sauce to thicken slightly.
- Return the chicken to the skillet, coating it in the creamy sauce. Simmer for another 5 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
For a milder version, substitute amarillo peppers with yellow bell peppers. Adjust the seasoning according to your taste preference.
