Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and mint extract, mixing until fully incorporated.
- In another bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
- Gradually incorporate the dry ingredients into the wet mixture, mixing until combined. Fold in the semisweet chocolate chips.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, then allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
- For the frosting, beat together the powdered sugar, softened butter, milk, mint extract, and green food coloring until smooth and creamy.
- Once the cookies are cooled, spread the mint frosting on top of each cookie.
- Optional: drizzle chocolate ganache over the frosted cookies for extra indulgence.
