These Chocolate Coffee Whoopie Pies are a delightful combination of rich chocolate and bold coffee flavors, perfectly complemented by a creamy coffee filling.
Ingredients
2 cups all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon instant espresso powder
½ cup unsalted butter softened
1 cup granulated sugar
1 large egg room temperature
1 teaspoon vanilla extract
1 cup milk
½ cup strongly brewed coffee cooled
¾ cup unsalted butter softened
3 cups powdered sugar
1 tablespoon instant espresso powder
1 tablespoon hot milk or water
1 teaspoon vanilla extract
1–2 tablespoons milk as needed for consistency
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, salt, and instant espresso powder.
- In another large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk and cooled coffee, until well combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cakes are set and a toothpick comes out clean.
- Allow the cakes to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- For the filling, beat the softened butter until creamy, then gradually add the powdered sugar, instant espresso powder, and hot milk or water, mixing until smooth.
- Adjust the consistency with additional milk if needed.
- Once the cakes are cool, spread a generous amount of coffee cream filling on the flat side of one cake, then sandwich it with another cake.
