Instructions

  • Preheat your oven to 325°F (160°C).
  • In a saucepan, heat the heavy whipping cream and dark chocolate over medium heat until the chocolate is melted and the mixture is smooth. Remove from heat.
  • In a bowl, whisk together the egg yolks, granulated sugar, and vanilla until the mixture is pale and thick.
  • Slowly pour the warm chocolate mixture into the egg yolk mixture, whisking continuously to prevent curdling.
  • Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to ensure a silky texture.
  • Divide the mixture evenly among ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  • Bake for 25-30 minutes, or until the edges are set but the centers are still slightly wobbly.
  • Remove from the oven and let them cool at room temperature, then refrigerate for at least 2 hours.
  • Before serving, sprinkle a thin layer of granulated sugar on top of each custard. Use a kitchen torch or broiler to caramelize the sugar until it’s golden and crispy.
