½ cup brown sugar

2 large eggs

at room temperature

4 very ripe bananas

mashed

1 teaspoon vanilla extract

1 cup chocolate chips (plus extra for topping)


Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  • In a mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, combine melted butter, granulated sugar, and brown sugar until well mixed.
  • Add eggs, mashed bananas, and vanilla extract to the sugar mixture and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips, reserving a few for the top.
  • Pour the batter into the prepared loaf pan and sprinkle the reserved chocolate chips on top.
  • Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a more intense chocolate flavor, you can add extra cocoa powder or chocolate chips. Ensure your bananas are very ripe for the best sweetness.
