A deliciously fresh Chicken Tzatziki Bowl that combines marinated chicken, vibrant vegetables, and a creamy tzatziki sauce over a bed of rice.
Ingredients
2 boneless
skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp dried oregano
Salt and pepper
to taste
1 cup cooked rice (white or brown)
1 cup cherry tomatoes
halved
½ cup cucumber
thinly sliced
¼ cup red onion
thinly sliced
Fresh parsley or dill
chopped (for garnish)
1 cup Greek yogurt
½ cucumber
peeled
seeded
and finely diced or grated
2 cloves garlic
minced
1 tbsp fresh dill
chopped (or 1 tsp dried dill)
1 tbsp lemon juice
1 tbsp olive oil
Instructions
- Preheat the grill or skillet over medium-high heat.
- In a bowl, combine olive oil, paprika, garlic powder, oregano, salt, and pepper. Add chicken breasts and coat well. Let marinate for 15 minutes.
- Grill or cook chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Let rest before slicing.
- In a separate bowl, mix Greek yogurt, diced cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper to create tzatziki sauce.
- Assemble the bowls by placing cooked rice at the base, topping it with sliced chicken, cherry tomatoes, cucumber, and red onion. Drizzle with tzatziki sauce.
- Garnish with fresh parsley or dill before serving.
