Ingredients
4 chicken thighs
bone-in and skin-on
4 slices of bacon
chopped
8 ounces mushrooms
sliced (button or cremini)
1 small onion
diced
3 cloves garlic
minced
1 cup heavy cream
1 cup chicken broth
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley
chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pan.
- In the same skillet, add the diced onion and sliced mushrooms. Sauté until softened, about 5-7 minutes, then add minced garlic and dried thyme, cooking for an additional minute.
- Season the chicken thighs with salt and pepper, and add them to the skillet, browning each side for about 5 minutes.
- Pour in the chicken broth and bring to a simmer. Reduce the heat to low, cover, and cook for 20 minutes or until the chicken is cooked through.
- Stir in the heavy cream and the reserved bacon. Cook for another 5 minutes, allowing the sauce to thicken slightly.
- Serve hot, garnished with fresh parsley.
Notes
For added depth of flavor, consider marinating the chicken thighs in some of the herbs overnight. Serve with rice or crusty bread to enjoy the creamy sauce.
