1 cup cooked rice
1 medium sweet potato diced into 1-inch cubes
1 pound chicken breast cubed into bite-sized pieces
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
1 cup broccoli florets
1 tablespoon soy sauce
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper. Spread them on a baking sheet.
- Bake the sweet potatoes for about 25 minutes or until they’re tender and lightly golden.
- While the sweet potatoes are baking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the cubed chicken and cook until it’s browned and cooked through, about 8-10 minutes.
- Add the broccoli florets to the skillet and pour in the soy sauce. Cook for an additional 5 minutes until the broccoli is bright green and tender.
- To assemble the bowls, start with a base of cooked rice topped with the sweet potato, chicken, and broccoli mixture.
Notes
