Instructions
- In a bowl, combine boneless chicken thighs with ground cumin, paprika, turmeric, minced fresh garlic, fresh lemon juice, ground coriander, ground cinnamon, and olive oil. Mix well to coat the chicken.
- Marinate the chicken for at least 1 hour, preferably overnight, to enhance the flavors.
- Preheat your oven to 400°F (200°C). Arrange the marinated chicken on a baking sheet and roast for about 30 minutes or until the chicken is cooked through and golden brown.
- While the chicken is cooking, prepare the garlic sauce by whisking together mayonnaise, minced garlic, and a squeeze of lemon juice in a bowl until smooth.
- Serve the roasted chicken sliced, drizzled with garlic sauce, and enjoy with pita or rice.
Notes
Feel free to substitute chicken breasts if that’s what you have, just adjust the cooking time to prevent drying out. For a lighter garlic sauce, replace mayonnaise with Greek yogurt.
