Description

This Chicken Shawarma recipe brings the vibrant flavors of the Middle Eastern cuisine right to your kitchen. Marinated chicken thigh fillets are grilled to perfection and served with a creamy yogurt sauce, fresh vegetables, and flatbreads.


Ingredients

1 kg / 2 lb chicken thigh fillets

skinless and boneless

1 large garlic clove

minced

1 tbsp ground coriander

1 tbsp ground cumin

1 tbsp ground cardamon

1 tsp ground cayenne pepper

2 tsp smoked paprika

2 tsp salt

Black pepper

2 tbsp lemon juice

3 tbsp olive oil

1 cup Greek yoghurt

1 clove garlic

crushed

1 tsp cumin

Squeeze of lemon juice

Salt and pepper

45 flatbreads

Sliced lettuce

Tomato slices

Red onion

finely sliced

Cheese

shredded

Hot sauce of choice


Instructions

  • In a bowl, combine minced garlic, ground coriander, ground cumin, ground cardamon, cayenne pepper, smoked paprika, salt, black pepper, lemon juice, and olive oil to create the marinade.
  • Add the chicken thigh fillets to the marinade and ensure they’re well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat your grill or oven to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and nicely charred.
  • Meanwhile, prepare the yogurt sauce by mixing Greek yoghurt, crushed garlic, cumin, lemon juice, salt, and pepper in a bowl. Set aside.
  • Once the chicken is cooked, remove from heat and let it rest for a few minutes. Slice the chicken thinly.
  • To serve, warm the flatbreads and fill them with sliced chicken, lettuce, tomato, red onion, and yogurt sauce. Add cheese and hot sauce if desired.

Notes

For a non-spicy version, reduce cayenne pepper to 1/2 tsp. Marinating overnight enhances the flavors.
