Ingredients
3 chicken breasts cut into small chunks
3 carrots peeled and chopped into chunks
3 medium sized potatoes peeled and chopped into small chunks
2 sticks of celery sliced
good pinch of salt and pepper
2 sprigs of fresh thyme or 1 tsp dried thyme
850 ml chicken stock (water plus 3 stock cubes is fine)
3 tbsp unsalted butter
1 large onion peeled and finely chopped
50 g plain flour
300 ml milk
juice of 1 lemon
1 small bunch fresh thyme
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the chicken and cook until browned on all sides.
- Add the carrots, potatoes, celery, salt, pepper, and thyme; cook for another 5 minutes.
- Sprinkle the flour over the mixture, stirring well to combine. Cook for an additional 2 minutes.
- Gradually pour in the chicken stock while stirring continuously to avoid lumps. Bring to a boil, then reduce to a simmer.
- Add the milk and lemon juice, stirring until the soup is creamy and heated through. Simmer for 15 minutes until the vegetables are tender.
- Taste and adjust seasoning as needed, then serve hot, garnished with fresh thyme if desired.
Notes
For a gluten-free version, use gluten-free flour and stock cubes. This soup can be stored in the fridge for up to 3 days.
