Chicken Marsala Casserole is a comforting Italian-American dish that combines tender chicken, rich mushrooms, and a savory Marsala wine sauce baked with brown rice for a hearty meal.
Ingredients
2 tablespoons butter
2 tablespoons olive oil
1 small onion diced
5 cloves garlic minced
16 ounces mushrooms sliced
1½ tablespoons flour
½ cup Marsala wine
½ cup fat-free half & half
2 cups low-sodium chicken broth
1 teaspoon salt
¼ teaspoon black pepper
1 cup uncooked brown rice
2 cups coarsely chopped cooked chicken
¼ cup fresh parsley chopped
2 tablespoons grated Parmesan cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the butter and olive oil over medium heat.
- Add the diced onion and minced garlic; sauté until translucent.
- Stir in the sliced mushrooms and cook until they release their moisture.
- Sprinkle the flour over the mushroom mixture and stir to combine.
- Pour in the Marsala wine, stirring to deglaze the pan and bring to a simmer.
- Add the half & half and chicken broth; season with salt and pepper.
- Stir in the uncooked brown rice and cooked chicken.
- Transfer the mixture to a greased casserole dish and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes or until the rice is tender.
- Remove from oven, uncover, and sprinkle with chopped parsley and Parmesan cheese before serving.
Notes
For a lighter version, use skinless chicken and low-fat cheese. Leftovers can be stored in the fridge for up to 3 days.
