Chicken Caesar Smash Tacos are a delightful twist on the classic Caesar salad, combining savory ground chicken, crispy bacon, and a quick Caesar dressing in a convenient taco format.

2 tbsp freshly grated parmesan

1 tbsp lemon juice

1 tsp dijon mustard

½ tsp freshly minced garlic

1 tsp Worcestershire sauce

4 slices streaky bacon (about 200 g/7 oz in total)

500 g (1 lb 2 oz) minced (ground) chicken

1 tsp garlic powder

1 tsp onion powder

1 tsp sweet paprika

½ tsp sea salt flakes

½ tsp freshly cracked black pepper

8 small flour tortillas (15–20 cm/6–8 inch)

Olive oil (if needed

for frying)

1 tsp olive oil

1 tbsp unsalted butter

½ cup (30 g) panko breadcrumbs

ÂĽ tsp sea salt flakes

1 tbsp freshly grated parmesan

2 cups (120 g) shredded cos (romaine) lettuce

ÂĽ cup (25 g) freshly grated parmesan


Instructions

  • In a bowl, combine the mayonnaise, parmesan, lemon juice, dijon mustard, minced garlic, Worcestershire sauce, sea salt, and black pepper to make the Caesar dressing. Mix well and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  • In the same skillet, add the minced chicken, garlic powder, onion powder, sweet paprika, sea salt, and black pepper. Cook until the chicken is fully cooked and browned, about 10 minutes. Stir in the crispy bacon and remove from heat.
  • For the crispy panko topping, heat olive oil and butter in a small pan. Add the panko breadcrumbs and sea salt, stirring until golden brown. Remove from heat and mix in grated parmesan.
  • To assemble, warm the flour tortillas in a skillet. Fill each taco with the chicken mixture, top with shredded lettuce, Caesar dressing, and crispy panko. Serve with additional parmesan cheese on top.

Notes

For a spicier kick, consider adding some red pepper flakes to the chicken mixture. Substitute turkey or a meat alternative for a healthier version.
