Description
The Chicken BLT Sandwich combines tender grilled chicken, crispy bacon, and marinated tomatoes, all nestled between fresh lettuce and hearty bread for a delicious meal that’s sure to please.
Ingredients
4 slices tomato
1 clove garlic grated on microplane or minced
¼ cup extra virgin olive oil
2 tablespoons +1 teaspoon red wine vinegar
⅛ teaspoon dried oregano
1 pinch kosher salt generous
3 strips bacon
2 slices bread sturdy
2–3 leaves lettuce red leaf
green leaf or iceberg
1 breast chicken thin sliced (approximately 1 inch)
1 tablespoon neutral oil like avocado oil or grapeseed oil
1–2 tablespoons mayonnaise
Instructions
- In a bowl, combine the tomato slices, grated garlic, olive oil, red wine vinegar, oregano, and a generous pinch of kosher salt. Let the tomatoes marinate for at least 15 minutes.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
- In the same skillet, add the neutral oil and then the thinly sliced chicken breast. Cook for about 5-6 minutes on each side or until fully cooked through.
- Toast the bread slices until golden brown.
- Spread mayonnaise on one side of each slice of bread. Layer with lettuce, marinated tomatoes, cooked bacon, and grilled chicken. Top with the second slice of bread, mayonnaise side down.
Notes
Feel free to customize the sandwich with your choice of bread and different lettuces. For added flavor, consider mixing some herbs into the mayonnaise.
