Instructions
- In a large bowl, combine 700 grams of bread flour with 350 grams of filtered water. Mix until a shaggy dough forms.
- Let the mixture rest for 30 minutes to an hour to allow the flour to hydrate.
- Add the remaining 350 grams of water and mix well to incorporate.
- Cover the bowl with a damp cloth and let it sit at room temperature for 5 to 7 days, stirring daily until bubbly and fragrant.
Notes
Ensure all equipment is clean to encourage healthy fermentation. Use filtered water to avoid chlorine, which can inhibit starter growth.
