Main Ingredients:

1 pound chicken sausage, sliced into 1-inch pieces (mild or smoked)

2 cups broccoli florets, fresh or frozen

2 cups cauliflower florets, fresh or frozen

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup shredded carrots


Instructions

Prepare the Vegetables:
Wash and chop the broccoli and cauliflower into bite-sized florets. Dice the onion and bell pepper, and shred the carrots if needed. Set aside.

Layer the Crockpot:
Spray the inside of the crockpot with non-stick cooking spray or coat lightly with olive oil. Add onion, garlic, bell pepper, and shredded carrots to the bottom. Layer broccoli and cauliflower on top.

Add the Chicken Sausage:
Place the sliced sausage over the vegetable mixture. Sprinkle paprika, salt, and black pepper evenly over the top.

Prepare the Cheese Mixture:
In a medium bowl, combine shredded cheddar cheese, heavy cream, and cream cheese. Mix until smooth. Microwave cream cheese for 10–15 seconds if too firm.

Pour and Cover:
Pour the cheese mixture evenly over the sausage and vegetables. Spread lightly to coat everything. Cover and cook on low for 4–5 hours or high for 2–3 hours.

  • Stir Before Serving:
    About 30 minutes before serving, gently stir the mixture for even cheese distribution.

Serve:
Taste and adjust seasoning if needed. Garnish with fresh parsley and red pepper flakes. Serve hot from the crockpot.

Notes

Use pre-cooked chicken sausage to prevent overcooking.

Layer vegetables strategically: denser ones at the bottom for even cooking.

If the sauce is too thick, add 1/4 cup cream or milk during cooking.
