Description
Indulge in these deliciously cheesy chicken patties with broccoli, packed with flavor and perfect for a family meal or a quick snack.
Ingredients
500 g / 1 lb chicken mince (ground chicken)
1 garlic clove
minced
1 egg
¾ cup panko breadcrumbs
2 packed cups broccoli
soft cooked & finely chopped
¾ cup finely chopped shallots
1 1/2 – 2 cups shredded mozzarella (or other cheese of choice)
3/4 tsp salt
Black pepper
Oil spray
2/3 cup plain yoghurt
1/8 tsp EACH dried dill
parsley and chives
¼ tsp onion powder
½ garlic clove
minced
1 – 2 tsp extra virgin olive oil
Squeeze of lemon juice

Instructions
- Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large bowl, combine chicken mince, minced garlic, egg, panko breadcrumbs, finely chopped broccoli, shallots, cheese, salt and black pepper. Mix until well blended.
- Using your hands, form the mixture into small patties and place them on the prepared baking tray.
- Spray the patties lightly with oil spray for a crispy finish.
- Bake in the preheated oven for 25-30 minutes, or until golden and cooked through.
- While the patties are baking, prepare the Yoghurt Ranch Sauce by mixing all the sauce ingredients in a bowl until smooth.
- Serve the cheesy chicken patties hot, with the Yoghurt Ranch Sauce on the side for dipping.
Notes
Use cooked broccoli for easy mixing. You can substitute the cheese with your favorite cheese varieties for different flavors.
