1/2 cup butter melted
1 cup light brown sugar packed
1 large egg
1 tablespoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup shredded carrots
4 ounces cream cheese room temperature
1/4 cup granulated sugar
1 large egg yolk
3/4 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine melted butter and brown sugar, then mix in the egg and vanilla extract.
- Gradually add flour, baking powder, baking soda, salt, and shredded carrots, mixing until well combined.
- In a separate bowl, beat cream cheese until smooth, then mix in granulated sugar, egg yolk, and vanilla extract.
- Pour half of the carrot cake mixture into the prepared pan, followed by the cheesecake mixture, and then top with the remaining carrot cake mixture.
- Swirl the cheesecake layer with a knife to create a marble effect, then bake for 30 minutes or until a toothpick comes out clean.
- Allow to cool before slicing into bars and serving.
